Beef tartare with eggs? Absolutely! But in a completely new way! Try combining chopped beef tartare with soy omelette.
Ingredients
- Spring onions – 2
- Black pepper – a pinch
- Pickled cucumber – 1
- Pickled gherkin – 1
- Sunflower oil – 70 ml
- Beef tenderloin – 200 g
- Marinated mushrooms – 2 tablespoons
Omelette
- Eggs – 2
- Soy sauce – 40 ml
Additional
- Mustard – 1 teaspoon
Preparation
Beat the eggs, season with soy sauce and pepper. Fry very thin omelettes on a pan (similar thickness to pancakes).
Mix finely chopped meat with oil. Then combine the meat with chopped cucumbers (pickled and gherkin), chopped spring onions, and marinated mushrooms, mixing thoroughly. Finally, season with pepper. Wrap the tartare in the omelettes, then cut into small pieces. Serve with mustard.
