Herring tartare with french mustard

A perfect tartare made from pickled herring – a quick and tasty idea for an appetizer.

Ingredients

  • Honey – 1 teaspoon
  • Red chili pepper – 1
  • Pickled cucumber – 2
  • Spring onion – 1
  • Fresh dill – 25 g
  • French mustard – 3 tablespoons
  • Olive oil – 20 ml
  • Matjes herring – 500 g
  • Lime – 2
  • Salt – a pinch
  • Black pepper – a pinch

Preparation

Rinse the herring fillets, pat them dry thoroughly with paper towels, then chop them into small cubes (approximately 0.5 x 0.5 cm). Transfer the chopped herring to a bowl, add lime juice and grated lime zest, mix well, and refrigerate to marinate.

Finely chop the onion and pickles (preferably in pieces about half the size of the herring cubes), and finely chop the chili pepper and dill. Add them to the marinated herring. Then add French mustard, honey, olive oil, and season to taste with freshly ground black pepper and salt. Mix all the ingredients thoroughly. Serve the tartare on a plate.

Garnish the tartare with sour cream and dill.
