Try this recipe that will simply delight you.
Ingredients:
- 10 thin and small asparagus spears (or 6 larger ones), steamed
- Small bunch of young Swiss chard leaves, rinsed and dried
Green Salsa:
- 1-2 tablespoons chopped parsley
- 1-2 tablespoons chopped chives
- 1-2 tablespoons chopped basil
- 1-2 tablespoons chopped mint
- 1-2 tablespoons chopped tarragon
- 2 tablespoons drained and chopped capers
- 1/3 clove garlic, finely chopped
- 6 tablespoons extra virgin olive oil, plus more to taste
- Sea salt and freshly ground black pepper, to taste
- Thinly sliced chives for garnish
Preparation:
Prepare the burgers as per the main recipe. Prepare the green salsa by mixing all the ingredients in a bowl; season with sea salt and freshly ground black pepper just before serving.
Divide the steamed asparagus and Swiss chard leaves between deep plates. Place the burgers on top. Drizzle with the green salsa, seasoned with salt and pepper just before serving. Garnish with thinly sliced chives.
