A simple recipe for a healthy breakfast addition. This delicious broad bean hummus will delight you with its unique flavor.
Ingredients
- Broad beans, 300 g (200 g after cooking and peeling)
- Salt and pepper
- Garlic clove, 1
- Extra virgin olive oil, 1 tablespoon
- Lemon juice, 1 tablespoon
- Tahini, 1 heaping tablespoon
- Mint leaves, 3
For garnish:
- Light sesame seeds
- Chili flakes
Preparation
Cook the broad beans in boiling salted water until tender, about 10 to 30 minutes depending on whether they are young or mature.
Drain the beans, saving a few tablespoons of the cooking water. Peel the beans and measure out 200 g (reserve the rest for garnish).
Place the peeled beans in a blender or food processor. Add salt, pepper, peeled garlic clove, olive oil, lemon juice, tahini, and mint leaves.
Blend everything thoroughly. If the hummus is too dry, gradually add the reserved cooking water until the desired consistency is reached.
Transfer to a serving bowl, top with the remaining broad beans, toasted sesame seeds, chili flakes, mint leaves, and a drizzle of extra virgin olive oil.
