Yeasted Buns with Custard

Yeasted buns filled with custard, their taste and aroma are poetry in motion. The classic combination of aromatic yeast dough with creamy custard filling makes them one of the most beloved homemade treats.

Ingredients

For the Buns:

  • Wheat flour, 680 g
  • Milk, 250 ml
  • Butter, 100 g
  • Sugar, 110 g
  • Eggs, 3
  • Egg whites, 4
  • Fresh yeast, 40 g
  • Vanilla sugar, 10 g
  • Salt, 4 g
  • Egg, 1

For the Custard:

  • Whole milk (3.2%), 500 ml
  • Egg yolks, 4
  • Granulated sugar, 60 g
  • Cornstarch, 30 g
  • Potato starch, 15 g
  • Vanilla sugar, 15 g

For the Crumble Topping:

  • Wheat flour, 100 g
  • Butter, 60 ml
  • Sugar, 60 g
  • Egg, 1

Preparation:

For the Crumble Topping:

Step 1: Prepare the Ingredients In a bowl, combine flour, butter, sugar, and egg. Mix everything well.

Step 2: Knead the Dough Knead the pre-mixed ingredients until they form a uniform dough.

Step 3: Chill the Crumble Wrap the kneaded dough into a ball, then tightly wrap it with plastic wrap and place it in the refrigerator. Meanwhile, prepare the dough for the buns and custard.

For the Custard:

Step 4: Mix the Base Ingredients In a saucepan, add egg yolks, both types of flour, sugar, and vanilla sugar. Mix well.

Step 5: Add Milk Slowly add milk to the mixture, stirring constantly.

Step 6: Cook the Custard Place the saucepan on the stove and heat the mixture over medium heat, stirring constantly. After a few minutes, the mixture should thicken and resemble custard. Wait until it boils and then remove the saucepan from the heat. Set aside to cool.

For the Yeasted Buns:

Step 7: Prepare the Yeast Starter Crumble the yeast and put it into a cup. Pour milk over it, add 15 g of sugar and about 60 g of flour, and mix. Cover the cup with a cloth and let it sit in a warm place for 10 minutes.

Step 8: Combine the Ingredients In a large bowl, mix together sugar (80 g), eggs, salt, softened butter, and the remaining flour, leaving about 20 g for later use. Beat the egg whites until stiff peaks form with the remaining sugar, then add to the large bowl. Also, add vanilla sugar and the yeast starter. Start kneading the dough with a stand mixer on low speed until smooth. If the dough is too thin, add a little flour.

Step 9: Allow the Dough to Rise Cover the bowl with the dough with a clean cloth and leave it in a warm place. During this time, the dough will begin to rise. Rising should take at least an hour.

Step 10: Roll Out the Dough Place the risen dough onto a floured surface. Begin rolling it out to a thickness of 2 cm. Take a glass or a round cutter and start cutting out circles from the dough. Form the remaining dough into a ball again, roll it out, and cut out circles. Repeat the process until you use up all the dough.

Step 11: Allow the Dough to Rise Again Transfer the cut-out dough circles onto a baking sheet lined with parchment paper and cover with a cloth. Leave in a warm place for 15 minutes.

Step 12: Fill the Buns with Custard Take a spoon and make slight indentations in all the dough circles, then spoon custard onto each of them.

Step 13: Glaze the Buns In a small bowl, beat an egg, then brush the dough with it.

Step 14: Sprinkle the Buns with Crumble Topping Crumble the chilled crumble topping, then sprinkle it over each bun.

Step 15: Bake the Buns Place the baking sheet filled with buns in a preheated oven at 180°C for 20 minutes. After baking, slightly open the oven door and let the buns cool gently, then serve to guests, family members, or enjoy them yourself!
