Yaki-Udon with Vegetables

Ingredients

Noodles

  • Udon noodles – 200 g
  • Yellow Bell Pepper – 1 piece
  • Shallot – 1 piece
  • Garlic Bulb – 1 clove
  • Shiitake Mushrooms – 20 g
  • Green Asparagus Beans – 100 g
  • Sesame Oil – 1 tablespoon

Sauce

  • Soy Sauce – 3 tablespoons
  • Oyster Sauce – 2 tablespoons
  • Mirin Sauce – 1 tablespoon
  • Cane Sugar – 1 tablespoon
  • Rice Vinegar – 0.5 teaspoon

Additional

  • Spring Onion – 1 bunch
  • White Sesame Seeds – 1 tablespoon

Preparation

Step 1: Prepare the Sauce, Mushrooms, and Green Beans Pour boiling water over the mushrooms and set aside while preparing the beans. Blanch the green beans in boiling, salted water and drain.

Once you have everything ready, mix all the sauce ingredients in a bowl.

Step 2: Prepare the Vegetables Slice the yellow bell pepper into strips, the shallot into rings, and the garlic clove into slices. Pour 1 tablespoon of sesame oil onto a well-heated pan and quickly sauté the pepper with the beans and shallot for about 2-3 minutes.

Then add the garlic and the drained and halved mushrooms. Do not discard the water in which the mushrooms were soaked.

Step 3: Cook the Noodles Cook the udon noodles according to the package instructions. If you have fresh noodles, cook for 1-2 minutes, if dry, cook for 5 minutes. Add them to the vegetables, pour the sauce over everything, and add a bit of the water from soaking the mushrooms. Then mix everything thoroughly.

Step 4: Serve the Noodles Sprinkle sesame seeds and finely chopped spring onions over the noodles and serve.
