Yuki-udon with vegetables

An exceptional, flavorful dish popular in Japan. Try our version and indulge in the aroma of Asian cuisine.

Ingredients – noodles

  • Udon noodles: 200 g
  • Yellow bell pepper: 1
  • Shallot: 1
  • Garlic: 1 clove
  • Shiitake mushrooms: 20 g
  • Green asparagus beans: 100 g
  • Sesame oil: 1 tablespoon

Ingredients – sauce

  • Soy sauce: 3 tablespoons
  • Oyster sauce: 2 tablespoons
  • Mirin: 1 tablespoon
  • Brown sugar: 1 tablespoon
  • Rice vinegar: 0.5 teaspoon

Additionally

  • Spring onion: 1 bunch
  • White sesame seeds: 1 tablespoon

Preparation

Pour boiling water over the mushrooms and set aside while preparing the green beans. Blanch the green beans in boiling, salted water and drain. Once that’s ready, mix all the sauce ingredients in a bowl.

Slice the yellow bell pepper into strips, the shallot into rings, and the garlic into slices. Heat 1 tablespoon of sesame oil in a well-heated pan and quickly sauté the bell pepper with the green beans and shallot for about 2-3 minutes.

Next, add the garlic and the drained and halved mushrooms. Do not discard the water in which the mushrooms were soaked.

Cook the udon noodles according to the package instructions. If using fresh noodles, cook for 1-2 minutes; if using dried, cook for 5 minutes. Add them to the vegetables, pour over the sauce, and a little bit of the mushroom soaking water. Then mix everything thoroughly.

Sprinkle the noodles with sesame seeds and finely chopped spring onion before serving.
