Veggie Burger

Veggie burger is a delicious and healthy option for those avoiding or limiting meat consumption. Hidden in a crunchy homemade bun is a veggie burger made from millet, carrots, oats, and aromatic spices.

Ingredients

Bun Ingredients

  • Spelt flour: 250 grams
  • Water: 100 milliliters
  • Yeast: 5 grams
  • Olive oil: 1 tablespoon
  • Egg: 1 piece
  • Birch sugar: 1 tablespoon
  • Sesame seeds: 1 tablespoon
  • Egg yolk: 1 piece

Burger Ingredients:

  • Carrot: 1 piece
  • Millet: 0.75 cups
  • Red onion: 0.5 piece
  • Oats: 4 tablespoons
  • Walnuts: 3 tablespoons
  • Olive oil: 50 milliliters
  • Spelt flour: 1 tablespoon
  • Coriander: 1 tablespoon
  • Ginger: 1 cm
  • Ground black pepper: 2 pinches
  • Chili powder: 2 pinches

Additional Ingredients:

  • Avocado: 2 pieces
  • Red onion: 2 tablespoons
  • Olive oil: 2 tablespoons
  • Arugula: 2 handfuls
  • Tomato: 5 slices
  • Lemon juice: 0.5 piece
  • Ground black pepper: 1 pinch

Preparation

  1. Making the Buns:

Dissolve yeast and birch sugar in water and set aside in a warm place for 15 minutes. Then, in a bowl, combine flour, water, egg, and dissolved yeast. Knead the dough until smooth. Cover the dough with a cloth and let it rise for about an hour. Shape the risen dough into 5 buns, place them on a baking sheet lined with parchment paper, cover, and let rise again in a warm place. Brush the buns with egg yolk mixed with sesame seeds and a little water. Place the buns in the oven and bake at 180°C for about 25 minutes.

  1. Making the Burger:

Mix all the ingredients together to form a sticky mixture. If the mixture is too dry, add a little olive oil. Shape the mixture into 5 burgers and place them on a baking sheet lined with parchment paper. Bake at 200°C for about 20 minutes. After this time, flip the burgers over and bake for another 10–15 minutes.

  1. Assembling:

Peel the avocado, remove the pit, and mash the flesh with a fork. Add lemon juice, chopped onion, olive oil, mix well, and refrigerate for 1.5 hours. Cut the buns in half and lightly toast them at 200°C until golden brown. Spread avocado paste on the prepared bread, place a burger on top, add arugula, a slice of tomato, and cover with the other half of the bun.
