Vegan Fajita with Portobello Mushrooms and Peppers

Fajitas in a vegan version? Try this recipe and enjoy a new, flavorful take on this Mexican dish!

Ingredients

  • Avocado – 1
  • Lemon – 0.5
  • Red onion – 1
  • Red bell pepper – 1
  • Lime – 1
  • Parsley – 20 g
  • Olive oil – 1 tablespoon
  • Portobello mushrooms – 400 g
  • Soy sauce – 3 tablespoons
  • Salt – a pinch
  • Yellow bell pepper – 1

Preparation

Step 1: Slice and Season Vegetables Slice mushrooms and peppers into strips, and onion into rings. Transfer the vegetables to a baking sheet, sprinkle with salt, drizzle with olive oil, lemon juice, and soy sauce. Mix everything well and spread evenly. Roast the vegetables for 30 minutes, stirring occasionally.

Step 2: Add Parsley Remove the roasted vegetables from the oven, sprinkle with chopped parsley, and mix. Serve with avocado slices and lime wedges (you can drizzle the vegetables with lime juice).
