Ingredients
- Avocado – 1
- Lemon – 0.5
- Red onion – 1
- Red bell pepper – 1
- Lime – 1
- Parsley – 20 g
- Olive oil – 1 tablespoon
- Portobello mushrooms – 400 g
- Soy sauce – 3 tablespoons
- Salt – a pinch
- Yellow bell pepper – 1
Preparation
Step 1: Slice and Season Vegetables Slice mushrooms and peppers into strips, and onion into rings. Transfer the vegetables to a baking sheet, sprinkle with salt, drizzle with olive oil, lemon juice, and soy sauce. Mix everything well and spread evenly. Roast the vegetables for 30 minutes, stirring occasionally.
Step 2: Add Parsley Remove the roasted vegetables from the oven, sprinkle with chopped parsley, and mix. Serve with avocado slices and lime wedges (you can drizzle the vegetables with lime juice).
