Ingredients
- Tagliatelle pasta – 300 g
- Chicken breast fillets – 2 pieces
- Heavy cream (30%) – 200 ml
- Parmesan cheese – 100 g
- Onion – 1 piece
- Garlic cloves – 2 pieces
- Olive oil – 50 ml
- Salt – 3 g
- Black pepper – 1.5 g
- Dried oregano – 1 g
- Ground smoked paprika – 1 g
- Chives – 0.33 bunch
Preparation
Step 1: Marinate the Chicken Pour 30 ml of olive oil into a bowl, add smoked paprika, oregano, 0.5 g of black pepper, and 1.5 g of salt, then mix. Clean the chicken, then cut it into strips and add to the marinade. Mix and set aside for 15 minutes.
Step 2: Prepare the Ingredients Wash and dry the cutting board, then peel the onion and garlic. Dice the vegetables finely.
Step 3: Saute the Onion and Garlic Heat 20 ml of olive oil in a frying pan, then sauté the garlic and onion in it.
Step 4: Cook the Chicken Once the vegetables become translucent, add the marinated chicken to the pan. Sauté for a few minutes until the meat softens and gains a golden color.
Step 5: Cook the Pasta In a large pot, bring water to a boil for the pasta. Add salt and cook the tagliatelle for 4-5 minutes. After the designated time, drain some pasta cooking water into a cup, then drain the rest and leave it in the pot.
Step 6: Prepare the Sauce Add a bit of cream to the cup with pasta water and mix. Pour the prepared mixture over the ingredients in the pan and mix. Cook for 2-3 minutes, then slowly add more portions of cream, stirring constantly. The sauce should slightly thicken after a few minutes.
Step 7: Season the Sauce Season the sauce with salt and pepper and mix.
Step 8: Add the Cheese Grate the Parmesan cheese directly into the sauce and mix.
Tip! If you want the sauce to be even creamier, you can add about 40 g of butter along with the cheese.
Step 9: Add the Pasta Add the cooked pasta to the sauce. Mix everything and cook for 3-4 minutes to let the sauce absorb into the pasta.
Step 10: Garnish and Serve the Pasta Transfer the finished pasta to deep plates. Chop the chives and sprinkle over each portion. You can also grate a bit more Parmesan on top if desired.
