Squirrel Cake

An easy-to-make cake that nobody can resist.


  • 4 eggs
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 50g raisins
  • 50g dried cranberries
  • 1 cup walnuts
  • 100g dark chocolate
  • 4 apples
  • 2 teaspoons cinnamon
  • 3/4 cup granulated sugar or powdered sugar
  • 5 – 6 tablespoons melted butter


  1. Preheat the oven to 180 degrees Celsius. Allow the eggs to come to room temperature.
  2. Sift the flour into a bowl, add baking powder, baking soda, and a pinch of salt, mix.
  3. Pour boiling water over the raisins and cranberries, then drain in a sieve after soaking for 10 minutes.
  4. Chop the walnuts and chocolate into pieces.
  5. Peel and grate the apples using a grater with large holes, mix with cinnamon.
  6. Beat the eggs with granulated sugar or powdered sugar until very fluffy and pale (about 10 minutes on medium mixer speed). Gradually add the melted and cooled butter while continuing to beat.
  7. Sift the flour with baking powder, baking soda, and salt directly into the bowl with the eggs and mix on low mixer speed, just until the ingredients are combined.
  8. Add the apples, walnuts, raisins, and chocolate, gently mix with a spoon.
  9. Line a baking pan measuring about 20 x 30 cm or a 30 cm cake pan with parchment paper, pour in the batter, and place in the oven. Bake for about 40 minutes (or until a toothpick inserted into the center comes out clean).
