Spaghetti with Mozzarella Balls and Cherry Tomatoes

Ingredients

  • Fresh basil: 12 g
  • Vegetable broth: 200 ml
  • Spring onion: 1
  • Black pepper: 1 pinch
  • Spaghetti pasta: 400 g
  • Mozzarella: 125 g
  • Olive oil: 2 tablespoons
  • Mushrooms: 250 g
  • Cherry tomatoes: 500 g
  • Salt: 1 pinch
  • 30% cream: 100 g

Preparation

  1. Bring a large pot of lightly salted water to a boil. Wash and drain the cherry tomatoes. Clean the mushrooms, wash, drain, and remove the stems. Clean the spring onions and slice them into rounds.
  2. Heat the olive oil in a large skillet. Fry the mushrooms on it for 3 minutes, turning them. Add the spring onions and fry everything together for 1 minute. Pour in the vegetable broth and cream. Add the cherry tomatoes. Season with salt and pepper, cover, and simmer for about 5 minutes until the tomatoes are soft but not falling apart.
  3. Cook the pasta al dente in boiling salted water according to the instructions on the package. Pluck basil leaves. Drain the mozzarella and add it along with the basil to the sauce. Season to taste. Drain the pasta and let it drain in a sieve. Mix it with the sauce on the plate.
