There are some recipes that work every time. One-Pot Rice Cooker Sausage and Peppers is quick to prepare and makes a perfect meal any time of day.
Ingredients:
- 3/4 cup uncooked long grain white rice
- 3/4 cup chicken stock
- 3/4 cup canned fire-roasted diced tomatoes (from 1 14.5 oz. can)
- 2 medium garlic cloves, minced (about 2 tsp)
- 2 teaspoons creole seasoning (such as tony chachere’s)
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- 1 cup chopped green peppers (from 1 small 7oz pepper)
- 1/3 cup chopped white onion (from 1 small 6 oz. white onion)
- 6 ounces andouille sausage, sliced into 1/4-inch coins (about 1 1/4 cups)
- sliced spring onions (for garnish)
Method of preparation:
Rinse rice under cold water until water runs clear. Drain well.
In the rice cooker insert, combine the rinsed rice, chicken broth, diced tomatoes (with their juices), minced garlic, Creole seasoning, black pepper and cayenne pepper (if using). Stir to combine.
Add the chopped green pepper, chopped white onion and sliced andouille sausage to the rice cooker insert. Stir to distribute evenly.
Place the rice cooker insert in the rice cooker and close the lid. Set the cooker on the normal cooking setting and allow to cook according to the manufacturer’s instructions, usually around 20-25 minutes.
When the cooker switches to the warm setting or indicates that cooking is complete, allow the food to steam for a few minutes.
Carefully open the lid and fluff up the rice with a fork. Taste and season to taste.
Serve the One Pot Rice Cooker Sausage and Pepper hot, garnished with sliced spring onions.
