Ingredients:
- 200 g sous-vide cooked salmon
- 1 tablespoon soy sauce
- 1/3 teaspoon grated ginger
- 1/2 teaspoon wasabi
For Serving (Optional):
- Lime wedges
- Quail or chicken egg yolk (if using the eggshell, scald it with boiling water)
For Decoration (Optional):
- Sprouts, black sesame seeds or nigella seeds, chives
Preparation:
Chop the salmon finely on a cutting board, add soy sauce, grated ginger, and wasabi, then chop again.
Place the mixture into 2 bowls greased with vegetable oil, then turn them out onto 2 plates. Make a well in the center and place the egg yolk in it.
Garnish with chives, sprouts, or sesame seeds and serve with lime wedges.
