Mexican street corn salad

Can you satisfy your hunger with a salad? Of course. Esquites is a famous, delicious Mexican street corn salad, very filling and wonderfully colourful!


  • 4 cups of corn (fresh or frozen)
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream or mexican crema
  • 1/4 cup crumbled cotija (or feta) cheese
  • 1/4 cup chopped fresh coriander
  • 1 jalapeño, seeded and chopped (optional)
  • 1 clove of garlic, minced
  • 1 lime, juiced
  • 1/2 teaspoon chilli powder
  • salt and pepper to taste
  • lime slices, to serve

Method of making:

If using fresh corn, grill the corn on a barbecue or in a frying pan until charred and cooked through. If using frozen corn, heat in a pan until lightly charred or microwave according to package instructions.

In a large bowl, combine the cooked corn, mayonnaise, sour cream, cotija cheese, coriander, jalapeño (if using), garlic, lime juice, chilli powder, salt and pepper. Stir until well combined.

Taste and adjust seasoning, adding more salt, pepper or lime juice if necessary.
