Beans are one of the staples of vegetarian cuisine. After tasting Vegetarian Refried Beans, even the most ardent meat lover may be convinced to try such dishes.
Ingredients:
- 1lb dry pinto beans, rinsed
- 2 tablespoons minced garlic, chopped
- 1 medium tomato, diced
- 2 tablespoons ground cumin
- 1 tablespoon chilli powder
- 2 tablespoons olive oil
- salt to taste
Method of preparation:
Place the rinsed pinto beans in a large saucepan and cover with water. Bring to a boil, then reduce the heat to low and simmer for about 1 to 1 1/2 hours or until the beans are tender. Drain and set aside.
In a frying pan, heat the olive oil over a medium heat. Add 1 tablespoon of the minced garlic and cook until fragrant, about 1 minute.
Add the tomato cubes to the skillet and cook until softened, about 3-4 minutes.
Stir in the cooked pinto beans, ground cumin, chilli powder and remaining minced garlic. Cook for a further 5-7 minutes, stirring occasionally.
Using a potato masher or the back of a fork, mash the beans to your desired consistency. If the mixture is too thick, add a little water to loosen it up.
Add salt to taste and cook for a further 2-3 minutes to allow the flavours to meld.
Once the beans are heated through and seasoned to your liking, remove from the heat and serve hot.
