Mexican style toasted sandwiches

Toasted sandwiches are a real journey around the world! These delicious, cheese-topped slices of bread served with fresh guacamole and cherry tomatoes will delight any party or make a special breakfast.

Ingredients

  • Buttermilk bread – 3 slices
  • Oil – 4 tablespoons
  • Hass avocado – 1 pc.
  • Red chili pepper – 0.5 pc.
  • White pepper – a pinch
  • Fresh coriander – 3 sprigs
  • Lime – 0.5 pc.
  • Garlic bulb – 2 cloves
  • Salt – a pinch
  • Cheddar cheese – 60 g
  • Cherry tomatoes – 8 pcs.

Preparation

Heat oil in a pan and fry the bread slices on both sides until golden brown. Mash the avocado in a bowl using a fork. Add the juice squeezed from half a lime. Finely chop the garlic, coriander, and chili pepper, then add them to the paste. Season with white pepper and mix well.

Grate the cheddar cheese using a grater with large holes and sprinkle it over the fried bread slices. Place the prepared sandwiches on a baking sheet lined with parchment paper and bake for about 2-3 minutes until the cheese melts. Cut the cherry tomatoes in half. Spread guacamole and tomatoes over the warmed sandwiches, garnish with a few coriander leaves, and season with salt to taste.
