An easy recipe!
Ingredients
- 200 g natural yogurt
- 3 eggs
- 190 g sugar
- 1 tablespoon vanilla sugar or 1 teaspoon vanilla extract
- 160 g melted butter
- 360 g all-purpose flour
- 2.5 teaspoons baking powder
- 0.75 teaspoon baking soda
- 1 teaspoon cocoa powder
- 0.5 teaspoon red gel food coloring
Icing
- 2 tablespoons lemon juice
- 2/3 cup powdered sugar OR Cream Cheese Frosting
- 100 g cream cheese
- 40 g butter
- 1 cup powdered sugar
Preparation
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Grease a loaf pan (11 x 30 cm) with butter and line it with parchment paper.
- In a bowl, pour yogurt, add eggs, sugar, vanilla, and melted butter (cooled to room temperature). Mix with a spoon until combined.
- In another bowl, sift together flour, baking powder, and baking soda. Mix well.
- Add the wet ingredients from the first bowl into the dry ingredients in the second bowl. Gently and slowly mix with a spoon until just combined (do not overmix!).
- Divide the batter into 2 equal parts. Add cocoa powder and red food coloring to one part and mix with a spoon until smooth.
- Pour 3 heaping tablespoons of the plain batter into the bottom of the prepared loaf pan and spread evenly. Next, pour 3 heaping tablespoons of the red batter and spread evenly over the plain batter. Repeat with alternating layers of plain and red batter until all the batter is used up.
- Place the loaf pan in the preheated oven and bake for about 45 minutes or until a toothpick inserted into the center comes out clean.
Icing or Cream Cheese Frosting
- For the icing: Heat the lemon juice, remove from heat, add powdered sugar, and mix until dissolved.
- For the cream cheese frosting: In a mixer bowl, combine cream cheese, room temperature butter, and powdered sugar. Beat with a mixer for about 1 minute until smooth and creamy.
- Spread the icing or cream cheese frosting over the cake and decorate with crumbs.
