Raw Brussels Sprouts and Fig Salad

Brussels sprouts are a fantastic source of vitamins C and K, fibre and antioxidants. Figs add sweetness and a boost of minerals such as calcium and potassium. Together they create a nutrient-rich dish that’s great for your health. The earthy flavour of the Brussels sprouts pairs beautifully with the natural sweetness of the figs. The garlic and lemon dressing adds a bright, tangy note that lifts the whole salad.

Ingredients:

  • 3 cups Brussels sprouts (halved, quartered if larger)
  • 1 cup figs (fresh, quartered)
  • 1/3 cup olive oil
  • 1 clove of garlic (pressed)
  • 1 teaspoon lemon juice
  • Sea salt (Himalayan, optional, to taste)
  • Pepper (optional, to taste)

Method of preparation:

Prepare the Brussels sprouts: Trim the ends of the Brussels sprouts and remove any damaged outer leaves. Halve or quarter them according to size.

Prepare the figs: Wash and quarter the figs.

Make the dressing: In a small bowl, whisk together the olive oil, pressed garlic and lemon juice.

Combine: In a large bowl, toss the Brussels sprouts and figs with the dressing until evenly coated.

Season to taste: Sprinkle with Himalayan sea salt and pepper to taste.

Serve: Allow the salad to sit for about 10 minutes to allow the flavours to meld, then serve.
