Ingredients:
- 3 cups Brussels sprouts (halved, quartered if larger)
- 1 cup figs (fresh, quartered)
- 1/3 cup olive oil
- 1 clove of garlic (pressed)
- 1 teaspoon lemon juice
- Sea salt (Himalayan, optional, to taste)
- Pepper (optional, to taste)
Method of preparation:
Prepare the Brussels sprouts: Trim the ends of the Brussels sprouts and remove any damaged outer leaves. Halve or quarter them according to size.
Prepare the figs: Wash and quarter the figs.
Make the dressing: In a small bowl, whisk together the olive oil, pressed garlic and lemon juice.
Combine: In a large bowl, toss the Brussels sprouts and figs with the dressing until evenly coated.
Season to taste: Sprinkle with Himalayan sea salt and pepper to taste.
Serve: Allow the salad to sit for about 10 minutes to allow the flavours to meld, then serve.
