A dish that no one will pass by indifferently. How to prepare the perfect rabbit liver?
Ingredients
- Rabbit liver, 2 pieces
- White onion, 3 pieces
- Apple, 1 piece
- Dried cranberries, 2 tablespoons
- Dried plums, 10 pieces
- Salt and pepper, to taste
- Dry red wine, 1/3 cup
- Marjoram, 1 teaspoon
- All-purpose flour, 3 tablespoons
- Clarified butter, as needed
- Parsley, for garnish
Preparation
- Peel and slice the onions into strips.
- Sauté them in clarified butter. Transfer to a plate.
- Cut the apples into chunks, leaving the peel on but removing the seeds. Sauté them in butter and transfer to the onions.
- Coat the rabbit liver with flour and fry it. Season with salt, pepper, and marjoram towards the end.
- Soak the dried plums and cranberries in wine for an hour.
- Add the onion and apple mixture and the plums with wine to the liver. Let it simmer for a while longer. Before serving, sprinkle with chopped parsley.
