Rabbit Liver with Cranberries and Plums

A dish that no one will pass by indifferently. How to prepare the perfect rabbit liver?

Ingredients

  • Rabbit liver, 2 pieces
  • White onion, 3 pieces
  • Apple, 1 piece
  • Dried cranberries, 2 tablespoons
  • Dried plums, 10 pieces
  • Salt and pepper, to taste
  • Dry red wine, 1/3 cup
  • Marjoram, 1 teaspoon
  • All-purpose flour, 3 tablespoons
  • Clarified butter, as needed
  • Parsley, for garnish

Preparation

  1. Peel and slice the onions into strips.
  2. Sauté them in clarified butter. Transfer to a plate.
  3. Cut the apples into chunks, leaving the peel on but removing the seeds. Sauté them in butter and transfer to the onions.
  4. Coat the rabbit liver with flour and fry it. Season with salt, pepper, and marjoram towards the end.
  5. Soak the dried plums and cranberries in wine for an hour.
  6. Add the onion and apple mixture and the plums with wine to the liver. Let it simmer for a while longer. Before serving, sprinkle with chopped parsley.
