Braised Rabbit with Dried Fruits and Spices

  • Onion, 2 pieces
  • Garlic, 3 cloves
  • White wine, 100 ml
  • Chicken broth, 1 liter
  • Linden honey, 2 tablespoons
  • Dried plums, a handful
  • Dried apricots, a handful
  • Raisins, a handful
  • Coarsely ground black pepper, to taste
  • Mulled wine and beer spice mix, with a hint of cinnamon, to taste
  • Vegetable oil, 1/2 cup
  • Flour, for dusting
  • Dates, a handful
  • Thyme, to taste
  • Rabbit, 1 piece


  1. Prepare all the ingredients.
  2. Rinse, clean, and cut the rabbit meat into pieces. Marinate the meat in a mixture of spices combined with oil for 2-4 hours.
  3. After marinating, pat dry the meat, dust with flour, and brown in a large pot with the onions cut into large cubes and the garlic cloves sliced ‚Äč‚Äčinto slices.
  4. After 15 minutes, add the wine and broth, simmer over low heat until tender for about an hour. 20 minutes before the end of cooking, add the washed and soaked fruits and honey.
  5. Serve this aromatic rabbit with cranberry horseradish and homemade dumplings.
