Preparation
Step 1: Prepare the Starter In a bowl, combine water, yeast, sugar, and salt. Set the starter aside for about 5 minutes until it becomes frothy.
Step 2: Knead the Dough In the bowl of a stand mixer, add flour, melted lard, and the starter. Knead the dough for about 10 minutes until it becomes smooth and elastic.
Step 3: Shape the Dough Shape the dough into a ball by hand and transfer it to an oiled bowl. Cover it with a cotton cloth and let it rise for at least 1 hour.
Step 4: Form the Pretzel Dogs After the dough has risen, knead it again and divide it into 15 equal pieces. Roll each piece into a rope about 50-60 cm long. Wrap each sausage in a slice of cheese, then in the dough, making sure they stick together.
Step 5: Cook the Pretzel Dogs Bring 2.5 liters of water mixed with baking soda to a boil. Then add the formed pretzel dogs and cook them for about 30 seconds. Transfer the parboiled snacks immediately to a baking sheet lined with parchment paper. Brush each pretzel dog with a mixture of beaten egg yolk and water, then sprinkle with coarse salt.
Step 6: Bake and Serve the Pretzel Dogs Bake the prepared snacks for about 10 minutes in an oven preheated to 230°C. Serve them warm, but slightly cooled.
