Ingredients:
- 5 cucumbers (thinly sliced)
- 4 radishes (thinly sliced)
- 3 tbsp spring onions (finely chopped)
- 2 tablespoons fresh dill (chopped)
- 1 cup sour cream
- 2 tablespoons mayonnaise
- 2 tbsp lemon juice (freshly squeezed)
- 2 tablespoons kosher salt
- 1/2 tablespoon sugar (optional)
Method of preparation:
Combine the thinly sliced cucumbers and radishes in a large bowl. Add the finely chopped spring onions and fresh dill.
In a separate bowl, mix together the sour cream, mayonnaise and freshly squeezed lemon juice. If you like a touch of sweetness, add the optional sugar.
Pour the dressing over the vegetables and toss gently to coat evenly.
Sprinkle the kosher salt over the salad and toss again. The salt will help to draw out the water from the cucumbers, making the salad more flavourful.
Leave the salad in the fridge for at least 30 minutes before serving. This will allow the flavours to meld and the salad to cool thoroughly.
