Pina Colada Creme Brulee

Feel like you’re on vacation with this delicious and delicate piña colada creme brulee! Be sure to try out this recipe!


Creme Brulee:

  • Pineapple – 300 g
  • Sugar – 60 g
  • Coconut milk – 80 g
  • Heavy cream (30% fat) – 300 g
  • Eggs – 4 pcs.


  • Brown sugar – 60 g
  • Fresh mint – 2 tbsp


Step 1: Prepare the Custard:

  1. Peel and dice the pineapple, removing the tough core. Arrange half at the bottom of 4 ramekins.
  2. Heat the heavy cream and coconut milk to around 80°C (do not bring to a boil).
  3. Gently whisk the egg yolks with the sugar. Gradually add the warmed cream mixture while whisking continuously. Mix thoroughly to combine.
  4. Strain the mixture through a sieve, then pour into the ramekins.

Step 2: Bake the Dessert:

  1. Place the ramekins on a baking sheet. Pour warm water into the baking dish to reach 2/3 up the sides of the ramekins. Bake in a preheated oven at 100°C for approximately 25 minutes.
  2. Remove from the oven, cool, and refrigerate until thoroughly chilled.

Step 3: Serve the Dessert:

  1. Sprinkle the top of each custard with brown sugar and caramelize using a kitchen torch.
  2. Serve with additional pineapple pieces and mint leaves.
