Ingredients

  • Soba noodles – 2 servings
  • Fresh spinach – 1 handful
  • Tofu – 1/2 block
  • Olive oil – 1 tablespoon
  • Garlic – 1 clove
  • Soy sauce – 1/3 teaspoon
  • Pepper – a pinch

Preparation

  1. Cook the soba noodles according to the package instructions.
  2. Rinse the spinach, pat it dry, and chop it, but not too finely.
  3. Peel and crush the garlic, then sauté it in heated olive oil for a moment. Add the spinach and diced tofu.
  4. Sauté briefly, season with soy sauce and pepper to taste. Transfer everything to the cooked noodles.
