Marinated Mushrooms

Marinated mushrooms are one of the delicacies that can be prepared from the treasures collected during a family walk in the forest. Perfectly seasoned and flavorful mushrooms from the marinade are perfect as an addition to salads, sandwiches, as well as fried meats and other main dishes. Ingredients

  • Boletus mushrooms – 500 g
  • Water – 700 ml
  • Wine vinegar – 150 ml
  • Onion – 1 pc.
  • Garlic clove – 2 pcs.
  • Olive oil – 30 ml
  • Sugar – 10 g
  • Salt – 6 g
  • Black pepper – 2 g
  • Allspice – 12 grains
  • Mustard seeds – 1 g

Preparation

Step 1: Prepare the Mushrooms Put on gloves, then proceed to wash the mushrooms to remove sand and other impurities. Also, trim the ends of the stems. Put the mushrooms in a bowl, pour water over them, rinse them thoroughly, and then drain the water.

Step 2: Blanch the Mushrooms In a large pot, add the mushrooms, pour in water (about 500 ml), add salt (about 2 g), and boil for 6-7 minutes. After blanching, drain the mushrooms and let them cool.

Step 3: Sauté the Onion and Garlic Peel and chop the garlic and onion. Slice the onion into feathers and the garlic into slices. Heat olive oil in a pan, then add the vegetables and sauté for a few minutes until soft.

Step 4: Add the Remaining Ingredients to the Marinade To the sautéed vegetables, add sugar, water, vinegar, and all the spices, and stir. Bring the mixture to a boil, then gently reduce the heat and cook for another 5 minutes.

Step 5: Add the Mushrooms Add the mushrooms to the boiling marinade and cook for 3-4 minutes. After the specified time, remove the mushrooms and let them cool slightly.

Step 6: Transfer the Mushrooms to a Jar Pour a little marinade into a clean jar, then add the mushrooms and another portion of marinade. Leave a small amount of space at the top of the jar, then seal it and refrigerate for at least 24 hours to allow the mushrooms to absorb the flavor of the marinade. You can also pasteurize these jars to enjoy the flavor of marinated mushrooms throughout the year.
