Lemon Pepper Salmon

Lemon and Pepper Salmon is a delightful dish that combines the tangy zest of lemon and the spicy kick of pepper with the rich, succulent flavours of salmon. This recipe is a testament to the beauty of simplicity in cooking, where a few well-chosen ingredients can create a dish that’s greater than the sum of its parts.

Ingredients:

  • 4 (4-ounce) salmon steaks
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1 tablespoon lemon pepper
  • 1 teaspoon salt
  • ¼ cup water
  • 1 cup chopped fresh tomatoes
  • 1 cup chopped fresh cilantro
  • 2 cups boiling water
  • 1 cup uncooked couscous

Method of preparation:

Preheat the oven to 200°C (400°F).

Place the salmon steaks, skin side down, in an ovenproof dish.

Drizzle the salmon with lemon juice and sprinkle evenly with lemon pepper.

Add the chopped garlic, salt, water, chopped tomatoes and coriander.

Cover the pan with foil and bake for 18-20 minutes or until cooked through.

Serve over cooked couscous.
