A superb meal that you can prepare quickly and conveniently.
Ingredients
- Vegetable oil – 2-3 teaspoons
- Onion – 1 piece
- Garlic – 2 cloves
- Chili pepper – 1 piece
- Lemongrass – 4 stalks
- Ginger – 2 cm
- Chicken breast – 1 kilogram
- Oriental Curry Spice – 4 teaspoons
- Coconut milk – 400 ml
- Coriander – a handful (fresh)
- Mango – 1 piece
- Lime – 1 piece
- Salt – to taste
- Whole Black Peppercorns – to taste
Add-ons:
- Rice – as desired
- Chili pepper – to taste
- Lime – 1 quarter
Preparation
- Slice half of the onion and the garlic into thin slices. Cut the chili pepper in half, remove the seeds, and finely chop it. Clean the lemongrass, crush it with a knife, and chop it. Peel the ginger and mango and cut them into small pieces. Cut the chicken breast into strips.
- Pour oil into a deep saucepan. Add the onion and meat – fry, stirring occasionally. Add lemongrass, chili, ginger, and garlic – fry briefly. Add the curry spice. Pour in the coconut milk, mix everything, and cook covered for about 10 minutes. Then add the mango and cook for a while. The curry tastes best seasoned with lime juice, sea salt, and black pepper. It’s also worth sprinkling it with chopped coriander and fresh chili.
- Serve in a bowl with naan bread or rice.
