Grilled Potato Salad

When the warm days approach, we start thinking about opening the grilling season. On this occasion, we have prepared for you a recipe for potato salad, perfect for grilling.

Ingredients

Smashed Potatoes

  • Water – 1 liter
  • Potatoes – 500 g
  • Olive oil – 15 ml
  • Vinegar – 10 ml
  • Sugar – 1 teaspoon
  • Garlic clove – 1
  • Parsley – 0.5 bunch
  • Salt – 1.5 teaspoons
  • Sweet paprika – 1 teaspoon
  • Black pepper – 1 teaspoon

Additions

  • Cucumber – 2 pieces
  • Red onion – 1 piece
  • Fresh dill – 0.5 bunch
  • Parsley – 0.5 bunch
  • Chives – 0.5 bunch

Sauce

  • Greek yogurt – 500 ml
  • Lemon – 0.5 piece
  • Salt – 0.5 teaspoon
  • Black pepper – 0.25 teaspoon

Preparation

Smashed Potatoes:

Step 1: Cook the Potatoes Pour a liter of water into a pot, then add a teaspoon of salt, sugar, and vinegar. Put the potatoes in the water and cook until tender (about 20 minutes).

Step 2: Drain the Potatoes Pour out the water from the pot, and drain the potatoes on a sieve.

Step 3: Prepare the Marinade Pour olive oil into a bowl, add the remaining salt, paprika, and pepper. Crush the garlic with a press and add it to the bowl. Finely chop the parsley and add it to the rest of the ingredients. Mix well.

Step 4: Spread the Potatoes on a Baking Sheet Spread parchment paper on a baking sheet. Place the potatoes on the paper, leaving some space between them.

Step 5: Smash and Season the Potatoes Smash each potato with the bottom of a glass, then coat with the marinade.

Step 6: Bake the Potatoes Insert the baking sheet with the potatoes into the oven and bake for 15-20 minutes until the skin is golden brown. Wash and dry the bowl.

Step 7: Cool the Potatoes Remove the finished smashed potatoes from the oven and let them cool, meanwhile prepare the rest of the salad ingredients.

Additions:

Step 8: Prepare the Ingredients Thoroughly wash and dry the cucumber, then cut it in half lengthwise. Cut each half lengthwise again, then chop into pieces about 1 cm thick. Peel and finely dice the onion. Put the vegetables in a bowl. Then proceed to chop all the herbs. Transfer them to the bowl and mix.

Sauce:

Step 9: Mix the Ingredients Add yogurt to a small bowl, then squeeze the juice from ½ lemon into it. Add the spices and mix.

Step 10: Transfer the Sauce to the Bowl with the Rest of the Ingredients Transfer the prepared sauce to the bowl and mix it with the rest of the additions.

Step 11: Add the Smashed Potatoes Add the cooled potatoes to the bowl, then mix everything together so that the sauce completely covers them. And it’s done!
