Grilled mackerel fillets

Trying new recipes is a fantastic way to expand your culinary skills and knowledge. This recipe introduces you to grilling and marinating fish, skills that can be applied to many other dishes. Grilled mackerel fillets are sure to impress your family and friends with their vibrant flavours and presentation. It’s perfect for a casual lunch or dinner party.

Ingredients:

  • 2 large mackerel fillets
  • for the marinade
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tsp ground ginger
  • 1 clove of garlic, crushed to a paste
  • 1 tbsp saké or dry sherry
  • 1 tsp chilli flakes
  • for the salad
  • 2 tbsp sesame oil
  • ½ lime, juiced
  • 1 tsp soy sauce
  • 1 tsp honey
  • 1 tsp sweet chilli sauce
  • 80g asian salad mix (pea shoots, purple radish and coriander)

Method of preparation:

Mix all the marinade ingredients together in a bowl. Add the mackerel fillets and turn to coat. Cover and leave to marinate in the fridge for at least 30 minutes.

Preheat the barbecue to medium heat. Remove the mackerel from the marinade, reserving the marinade for basting.

Place the mackerel fillets under the grill, skin side up. Grill for about 3-4 minutes on each side, basting with the marinade, until the fish is cooked through and the skin is crisp.

While the fish is barbecuing, prepare the salad. In a large bowl, whisk together the sesame oil, lime juice, soy sauce, honey and sweet chilli sauce. Add the Asian salad mix and toss to coat.
