  • 4 sausages
  • 2 buns (hard crust bread)
  • 300ml tomato sauce (tomato, ketchup)
  • 1 large onion, finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 tablespoon curry powder
  • 1 teaspoon Worcestershire sauce
  • 1 tbsp applesauce
  • 1 tsp chilli powder
  • 1 tbsp caramelised onion
  • 1 teaspoon curry powder

Method of preparation:

Heat the olive oil in a frying pan over a medium heat. Add the finely chopped onion and cook until soft.

Add the balsamic vinegar, honey, curry powder, Worcestershire sauce, apple sauce and chilli powder to the pan. Stir well to combine.

Pour in the tomato sauce and bring to the boil. Cook for about 10 minutes or until the sauce has thickened.

While the sauce is cooking, grill the sausages until cooked through and nicely browned.

Slice the cooked sausages and add to the sauce. Stir well to ensure that the sausages are fully coated in the sauce.

Serve the curry sausages on the buns, topped with the caramelised onion and an extra sprinkle of curry powder.
