Feijoada – a dish with bacon, black beans, and chorizo with the addition of fried bananas. Are you familiar with Brazilian cuisine? If not, you must try this recipe.
Ingredients
Feijoada:
- Smoked raw bacon: 200 grams
- Black beans: 2 cans
- Pork chorizo: 50 grams
- Wild boar chorizo: 40 grams
- Onion: 2 pieces
- Garlic: 3 cloves
- Water: 1.5 liters
- Whole cloves: 5 pieces
- Bay leaves: 4 pieces
- Ground allspice: 1/2 teaspoon
Fried bananas:
- Banana: 2 pieces
- Chili powder: 1/2 teaspoon
- Fine iodized sea salt: to taste
- Flour
- Egg: 1 piece
- Breadcrumbs
Sides:
- Jasmine rice
- Orange fillets: 1 piece
Preparation
- In a skillet, sauté the chopped bacon with the rind removed, add chorizo and sauté for about 3-4 minutes. Transfer the fried bacon and chorizo to a pot, leaving the fat in the skillet, and pour in half of the water. Add ground allspice.
- In the same skillet with the fat, sauté the onion with garlic, cloves, and bay leaf for 2-3 minutes, then transfer everything to the pot. In the same skillet, toast the black beans for 4 minutes and transfer them to the pot.
- Rinse the skillet with the remaining water and add it to the dish. Simmer the feijoada for about 30 minutes.
- Meanwhile, peel the bananas, cut them in half, sprinkle with chili powder, salt, and coat with flour, egg, and breadcrumbs. Fry the bananas in deep oil for about 4-5 minutes or until golden.
- Transfer the cooked feijoada to a bowl, sprinkle with parsley, and place the bananas, rice, and orange pieces on a plate.
