Drunken Chicken

Food is love, and what better way to show it than by serving a hearty, home-cooked meal? This Drunken Chicken is perfect for gathering friends and family around the table for an unforgettable feast.

Ingredients:

  • 1 (3lb) whole chicken
  • Salt and pepper to taste
  • 1 cup prepared Dijon-style mustard
  • 8 fluid ounces beer
  • ½ cup Italian-style salad dressing

Method of preparation:

Clean and pat the chicken dry.

Season the chicken inside and out with salt and pepper.

In a large bowl, mix together the Dijon mustard and Italian salad dressing.

Slowly pour in the beer, stirring constantly to combine.

Place the chicken in a large resealable bag or deep dish.

Pour the marinade over the chicken, making sure it is well coated.

Close the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

Preheat the barbecue to medium heat.

Remove the chicken from the marinade and discard any excess marinade.

Place the chicken on the barbecue and cook, turning occasionally, until the juices run clear and the internal temperature reaches 165 degrees F (75 degrees C), about 1 ½ to 2 hours.

Allow the chicken to rest for 10 minutes before carving.

Serve with your choice of side dish, such as grilled vegetables or a fresh salad.
