Double Decker Tacos are a unique twist on the traditional taco. With a soft tortilla on the outside and a crispy shell on the inside, you get the best of both worlds. The combination of seasoned beef, refried beans, fresh vegetables and creamy avocado is incredibly tasty. One of the best things about this recipe is that it’s highly customisable. You can add your favourite toppings or swap ingredients to suit your dietary needs or preferences.
Ingredients:
- 1 pound ground beef
- 1 (1 ounce) packet taco seasoning mix, divided
- 1 (16 ounce) can refried beans
- ⅔ cup water
- 12 prepared crispy taco shells
- 2 avocados
- 1 tablespoon sour cream
- 1 fresh lime, juiced
- salt and black pepper to taste
- 12 (7 inch) flour tortillas
- 2 cups grated cheddar cheese
- 1 cup shredded lettuce
- 1 large tomato, chopped
- ¼ red onion, chopped
- ½ cup sour cream
Method of preparation:
In a skillet over medium heat, brown the ground beef. Pour off any excess fat.
Add half of the taco seasoning mix to the beef and stir to combine.
Prepare the beans: In a saucepan, combine the refried beans, water and remaining taco seasoning. Cook over medium heat until heated through.
In a bowl, mash the avocados and mix with the sour cream and lime juice. Season to taste with salt and black pepper.
Spread a layer of the bean mixture on each flour tortilla. Wrap the tortilla around a crisp taco shell. Fill the shell with the seasoned beef, avocado cream, shredded cheese, lettuce, tomato and red onion. Top with a dollop of sour cream.
