Tortilla with Egg and Bacon

A fantastic way to start your day or enjoy a quick snack – tortillas with sunny-side-up eggs in tomatoes, bacon, and herb cream cheese!


  • Bacon slices – 80 g
  • Eggs – 8 pieces
  • Lime – 0.5 piece
  • Butter – 2 tablespoons
  • Parsley – 5 g
  • Grainy cayenne pepper – 1 teaspoon
  • Red tomato – 1 piece
  • Cream cheese – 150 g
  • Salt – a pinch
  • Fresh mint – 2 g
  • Tortillas – 4 pieces


Step 1: Season the Cream Cheese Wash the herbs, pluck off the leaves, and chop them finely. Mix them with the cream cheese, lime zest, and a bit of lime juice, season with salt and grainy cayenne pepper.

Step 2: Fry Eggs with Tomatoes Clean the tomato and slice it thinly. Fry the bacon in a pan until crispy, then set it aside. Melt the butter in the pan, briefly sauté the tomato slices on both sides. Crack the eggs into the pan with tomatoes and fry them sunny-side-up.

Step 3: Prepare the Tortillas Heat each tortilla briefly in a dry pan until they become elastic. Spread them with the herbed cream cheese and sprinkle with bacon. Place 2 sunny-side-up eggs with tomatoes on each tortilla, lightly season with salt, and serve immediately.
