Ciabatta with pesto and grilled chicken

A ciabatta straight from the grill, creating an exceptional sandwich in the Italian style, perfect for breakfast or dinner. Prepare it and taste how delicious it is!


  • Balsamic vinegar – 2 tablespoons
  • Honey – 1 teaspoon
  • Olive oil – 4 tablespoons
  • Chicken breast – 1 piece
  • Ciabatta – 1 piece
  • Pesto – 2 tablespoons
  • Eggplant – 3 slices
  • Sun-dried tomatoes in oil – 3 pieces
  • Mozzarella – 0.5 piece
  • Fresh basil – 3 leaves


Mix balsamic vinegar with honey and 2 tablespoons of olive oil. Cut the chicken breast into slices about 1 cm thick. Marinate the meat in the prepared marinade for about 10 minutes.

Slice the ciabatta in half lengthwise. Place it on a grill pan with the inner side down and grill for about 1.5 minutes. Then spread pesto on the inner side.

Grill the marinated chicken for about 2 minutes. Then, on the grill pan, grill the eggplant slices brushed with olive oil until they take on a golden-brown color.

On the bottom half of the ciabatta, layer the grilled eggplant, sun-dried tomatoes, chicken pieces, mozzarella slices, and basil leaves. Cover the assembled sandwich with the top half of the ciabatta and grill for another 2 minutes.
