Chocolate Cake with Mascarpone Cream – Quick Recipe

A cake with a mascarpone cream base is a real treat for all sweet tooth fans. The velvety, creamy cheese perfectly complements many ingredients such as chocolate or fresh fruits. How to prepare chocolate cake with creamy mascarpone and fruits? Discover our recipe!


Chocolate Sponge Cake:

  • Sugar – 250 g
  • Cake flour – 200 g
  • Vegetable oil – 140 ml
  • Still water – 80 ml
  • Cocoa powder – 60 g
  • Eggs – 5
  • Baking powder – 5 g
  • Baking soda – 5 g
  • Salt – 2 g


  • Mascarpone cheese – 250 g
  • Heavy cream (30% fat) – 200 ml
  • Powdered sugar – 110 g
  • Vanilla sugar – 4 g


  • Strawberries – 12
  • Blueberries – 20


Chocolate Sponge Cake:

Step 1: Prepare the Cocoa In a saucepan on the stove, pour in the water and oil, then add the cocoa and 120 g of sugar. Set the stove to low heat and begin heating the mixture, stirring constantly. Once the ingredients are boiled and fully dissolved, set aside to cool.

Step 2: Beat Eggs with Sugar In a bowl, add 130 g of sugar, then crack in the eggs. Start mixing the ingredients on high speed until you get a uniform, fluffy mixture.

Step 3: Combine the Ingredients Gently pour the contents of the saucepan into the egg mixture and stir. Finally, add the flour, baking powder, salt, and baking soda, then gently mix with a spatula.

Step 4: Pour the Batter into a Mold Line the cake pan with parchment paper, then pour the cocoa mixture into it.

Step 5: Bake the Sponge Cake Place the mold in the oven on the middle rack and bake for about 35 minutes. After the specified time, perform a toothpick test to check if the cake is sufficiently baked. If so, you can leave it in the oven to cool and proceed to prepare the cream.


Step 1: Whip the Cream In a tall container, whip the heavy cream until stiff peaks form, adding vanilla sugar.

Step 2: Mix Mascarpone with Sugar In a bowl, add mascarpone and powdered sugar, then mix.

Step 3: Combine the Ingredients Slowly add the whipped cream to the smooth cheese mixture, then gently mix with a spoon.


Step 1: Prepare the Base Remove the sponge cake from the mold, then cut it in half lengthwise. Place both halves side by side and start spreading the cream on the bottom. Smooth it out and cover with the second half of the sponge cake, then finish everything with a layer of cream.

Step 2: Prepare the Fruits Carefully wash the strawberries and blueberries. Remove the stems from the strawberries and cut them into quarters. Leave the blueberries whole.

Step 3: Decorate the Cake Arrange the fruits on top of the cake, then place in the refrigerator for 2-3 hours.

Step 4: Serve the Cake Remove the finished cake from the refrigerator and cut into rectangular pieces. Serve alone or with a scoop of wild berry sorbet.
