Chicken Gnocchi

Ingredients

Gnocchi

  • Water – 1000 ml
  • Potato – 500 g
  • Italian type 00 flour – 300 g
  • Egg – 1 pc.
  • Salt – 4 g

Sauce

  • Chicken breast – 2 pcs.
  • Canned plum tomatoes – 400 g
  • Vegetable broth – 100 ml
  • Onion – 1 pc.
  • Garlic clove – 2 pcs.
  • Butter – 20 g
  • Olive oil – 20 ml
  • Salt – 2 g
  • Black pepper – 0.5 g
  • Dried oregano – 0.2 g
  • Dried rosemary – 0.2 g
  • Fresh basil – 8 leaves

Preparation

Gnocchi: Step 1: Cook the Potatoes Wash and peel the potatoes, then cut them into cubes. Bring water to a boil in a pot, add salt (about 2 g), and put the potatoes in. Cook for 15-20 minutes, checking the doneness occasionally. The potatoes should be soft but not falling apart. After cooking, drain the potatoes and set aside to cool.

Step 2: Mash into Purée Put the cooled potatoes in a potato masher, then grate them into smooth purée.

Step 3: Mix the Ingredients In a large bowl, put the mashed potatoes, then add the egg and the remaining salt. Mix everything. Gradually start adding flour while stirring continuously.

Step 4: Knead the Dough Start kneading the dough. The finished dough should be elastic but not sticky.

Step 5: Shape the Gnocchi Sprinkle the work surface with flour, then place the dough on it and divide it into two parts. Form a roll from each and then cut it into slices about 2-2.5 cm thick. Use a fork to make gentle indentations on each dumpling to create a characteristic pattern.

Step 6: Cook the Gnocchi Pour water into a pot and bring it to a boil. Once boiling, add the gnocchi. Cook for 3-4 minutes until they float to the surface. Pour a bit of water into a cup (about 40 ml), then drain the rest from the pot and drain the gnocchi.

Sauce: Step 1: Prepare the Ingredients Clean the chicken and cut it into strips, then put it in a bowl. Peel and finely chop the onion and garlic.

Step 2: Sauté the Ingredients Heat the butter and olive oil in a pan, then add the onion and garlic. Sauté for 1-2 minutes, then add the chicken. When the meat releases its juices, season with salt, pepper, and herbs. Sauté until the chicken is golden brown.

Step 3: Add the Broth Slowly pour the broth over the chicken. Stir and let it simmer for 4-5 minutes. During this time, most of the broth should evaporate.

Step 4: Add the Tomatoes Add the tomatoes to the other ingredients and mix everything thoroughly. Simmer for 5-6 minutes. The tomatoes should gently reduce their volume.

Step 5: Add the Water from Cooking the Gnocchi Add the water from the cup to the sauce and mix. Let the sauce cook for another 3-4 minutes.

Step 6: Finish the Dish Add the dumplings to the pan and simmer for a few minutes. Transfer the finished dish to deep plates and garnish with basil leaves.
