Shaved Carrot Salad

This salad Has a number of benefits worth trying.   • 4-5 large carrots, peeled
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dijon mustard
  • salt and pepper to taste
  • fresh parsley or cilantro for garnish (optional)
  • toasted nuts or seeds for topping (optional)

Method of making:

Using a vegetable peeler, shave the carrots into thin ribbons, working from top to bottom. Place the shaved carrots in a large mixing bowl.

In a small bowl, whisk together the olive oil, lemon juice, honey or maple syrup, Dijon mustard, salt, and pepper until well combined.

Pour the dressing over the shaved carrots and toss gently to coat the carrots evenly.

Let the salad marinate in the refrigerator for at least 15-20 minutes to allow the flavours to meld together.

Before serving, garnish the salad with fresh parsley or cilantro and toasted nuts or seeds, if desired.
