Ingredients
- brown sugar – 200 g
- dark chocolate – 375 g
- espresso – 75 ml
- eggs – 2
- butter – 200 g
- all-purpose flour – 80 g
- baking powder – 1 teaspoon
- salt – a pinch
- dried cherries – 100 g
- butter – 20 g
- egg – 1
Preparation
Step 1: Melt the chocolate Chop the chocolate. Finely chop 1 tablespoon of cherries and set aside. Melt 250 g of chocolate in a water bath together with diced butter, then let it cool.
Step 2: Prepare the brownie batter Combine eggs, egg yolk, sugar, and salt and mix until a creamy mass is formed (until the sugar dissolves). Add the chocolate mixture and mix again. Combine the remaining cherries with flour and baking powder, add espresso, and mix briefly. Add 100 g of chopped chocolate and gently mix everything.
Step 3: Bake the brownie Transfer the batter to a baking sheet lined with parchment paper. Bake in an oven preheated to 180°C for about 30 minutes, until the top is crispy and the inside is still slightly soft. Let the brownie cool in the pan.
Step 4: Decorate with melted chocolate Melt the remaining chocolate in a water bath and use a spoon to drizzle it over the cake, creating stripes. Sprinkle with chopped cherries and let it dry. Cut into squares.
