Caramelized cashews

  • brown sugar – 300 g
  • butter – 100 g
  • olive oil – 2 tablespoons
  • cashew nuts – 250 g
  • baking soda – 1 teaspoon
  • salt – a pinch
  • maple syrup – 65 g
  • water – 125 ml


Step 1: Roast the cashews Roast the cashew nuts in a dry pan until they turn golden brown. Transfer them to a bowl.

Step 2: Grease the parchment paper Line a baking sheet with parchment paper and grease it with olive oil.

Step 3: Simmer the sugar, water, butter, and syrup In a large saucepan, bring the brown sugar, water, butter, maple syrup to a simmer, stirring occasionally. Reduce the heat and simmer for about 20-30 minutes until the mixture thickens and reduces slightly.

Step 4: Add the cashews, salt, and baking soda Remove the saucepan from the heat and quickly add the cashews, salt, and baking soda. Stir and pour onto the prepared baking sheet. Use a silicone spatula to spread it out thinly.

Step 5: Let it cool completely Let it cool completely for about an hour, then break or cut into pieces of any size.
