Bread from a pot

Baking bread in a pot is one of the simplest and most satisfying ways to bake this type of bread in the comfort of your own home. This method allows you to achieve a truly crispy crust and soft, fluffy interior.

Ingredients

  • Water: 300 ml
  • Water: 100 ml
  • Fresh yeast: 15 g
  • Sugar: 10 g
  • Salt: 6 g

Preparation

Pour 100 ml of water into a small heatproof pot, which you will place in the oven along with the bread.

In a bowl, crumble all the yeast, add 5 g of sugar and 15 g of flour, and 100 ml of lukewarm water. Stir and set aside for about 15 minutes to allow the yeast to start working.

Sift the flour into a large bowl, then add salt and the remaining sugar. Mix cold water with yeast and gradually pour the solution into the flour, stirring the ingredients with a spoon. Gather the flour towards the center to knead it quickly and smoothly. Cover the dough with plastic wrap and a cloth, then refrigerate for at least 12 hours.

After the designated time has passed, take the dough out of the refrigerator and place it on a floured surface (use about 15 g of flour). Grab the sides of the dough and, rolling it towards the center, shape it into a ball. Place a clean cloth on the counter and lightly dust it with flour (enough to prevent sticking), then place the bread on it with the seam side down. Cover the dough and let it rise for 2 hours.

When there are about 30 minutes left for the dough to rise completely, preheat the oven to 240 degrees Celsius. Place the pot in the oven to heat it slightly.

Wear oven gloves and take the pot out of the oven, then remove the lid. Carefully transfer the dough from the cloth into the pot. Cover the pot with the lid and place it in the oven for another 30 minutes. Also, place a container filled with water in the oven.

After 30 minutes, remove the lid from the pot and bake the bread for 15-20 minutes more until it is golden brown. Using oven gloves, remove the pot from the oven. Open it and let the bread cool slightly.

When the bread is slightly warm, remove it from the pot and let it cool completely for about an hour.
