Ingredients
- Lamb ribs, 500 grams
- Clarified butter, 1 teaspoon
- Vegetable broth, 500 milliliters
- Garlic, 2 cloves
- Potato starch, 2 teaspoons
- Fine sea salt, to taste
- Ground black pepper, to taste
- Spices and herbs:
- Lemon zest, 1 teaspoon
- Freeze-dried parsley, 3 teaspoons
- Freeze-dried dill, 2 teaspoons
- Freeze-dried chives, 2 teaspoons
- Whole colored peppercorns, 1 teaspoon (powdered)
- Sweet paprika, 1 teaspoon
- Dried garlic, 2 teaspoons
Preparation
- Divide the lamb into portions, sear it on both sides in clarified butter. Add crushed garlic pressed through a garlic press, and sauté for a moment longer.
- Then pour in the vegetable broth, add herbs, spices, and simmer over low heat for 45 minutes.
- Thicken the sauce with dissolved potato starch in cold water. Season with salt and pepper to taste.
