Braised Lamb in Sauce

Ingredients

  • Lamb ribs, 500 grams
  • Clarified butter, 1 teaspoon
  • Vegetable broth, 500 milliliters
  • Garlic, 2 cloves
  • Potato starch, 2 teaspoons
  • Fine sea salt, to taste
  • Ground black pepper, to taste
  • Spices and herbs:
    • Lemon zest, 1 teaspoon
    • Freeze-dried parsley, 3 teaspoons
    • Freeze-dried dill, 2 teaspoons
    • Freeze-dried chives, 2 teaspoons
    • Whole colored peppercorns, 1 teaspoon (powdered)
    • Sweet paprika, 1 teaspoon
    • Dried garlic, 2 teaspoons

Preparation

  1. Divide the lamb into portions, sear it on both sides in clarified butter. Add crushed garlic pressed through a garlic press, and sauté for a moment longer.
  2. Then pour in the vegetable broth, add herbs, spices, and simmer over low heat for 45 minutes.
  3. Thicken the sauce with dissolved potato starch in cold water. Season with salt and pepper to taste.
