Baked Asparagus with Egg

With cocktail tomatoes and blue cheese


  • 1 serving
  • 1/2 bunch of asparagus
  • 1 teaspoon butter
  • 100 g cocktail tomatoes
  • salt, pepper
  • 1 tablespoon extra virgin olive oil
  • 2 eggs
  • 60 g blue cheese
  • 2 tablespoons grated Parmesan or Grana Padano To serve: greens such as basil, chives, and baguette


Preheat the oven to 180 degrees Celsius. Grease the bottom of a baking dish with butter. Rinse the asparagus, snap off the tough, pale ends (they will break naturally at the right point). Place them in the baking dish. Add halved cocktail tomatoes, season with salt, pepper, and drizzle with olive oil. Crack 2 eggs over the vegetables and sprinkle with diced blue cheese and grated Parmesan or Grana Padano. Bake uncovered for 18 – 20 minutes. Sprinkle with greens and serve with bread, such as baguette.
