Avocado Black Bean Brownies

These Avocado Black Bean Brownies are not only a treat for the taste buds, but also a treat for the soul. Made with the goodness of ripe avocados and the richness of black beans, this recipe is a testament to the fact that indulgence and well-being can dance together in harmony. Ingredients:

  • 1 tablespoon coconut oil
  • 2 ½ tablespoons water
  • 1 tablespoon flaxseed meal
  • 1 (15 ounce) can unsalted black beans, drained and rinsed
  • ½ cup coconut sugar
  • ½ avocado, peeled and mashed
  • 2 tbsp coconut oil (melted)
  • ⅔ cup cocoa powder
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking powder
  • ⅓ cup vegan chocolate chips, plus extra for topping

Method of preparation:

Preheat the oven to 175°C (350°F). Grease and set aside an 8-inch square baking pan.

In a small bowl, combine 1 tablespoon coconut oil, water and flax seed meal. Stir and leave for a few minutes to form a flax egg.

In a food processor, combine the black beans, coconut sugar, mashed avocado and melted coconut oil. Blend until smooth.

Add the cocoa powder, baking soda and baking powder to the food processor. Pulse until well combined.

Fold in the vegan chocolate chips with a spatula.

Pour the mixture into the prepared baking tin and smooth down the top with a spatula. Sprinkle with additional chocolate chips if desired.

Bake for 25-30 minutes, or until the brownies are set and a toothpick inserted in the centre comes out mostly clean.

Allow the brownies to cool in the pan before cutting into squares.
