This typical Asian delicacy is perfect for any occasion. It can be served hot or as a snack.
Ingredients:
- 1lb sugar snap peas, trimmed
- 3 tablespoons garlic flavoured olive oil
- 1/4 cup low sodium soy sauce
- 1/4 teaspoon sesame oil
- 2 drops chilli oil
- 1/4 teaspoon packed brown sugar
- 2 tablespoons toasted sesame seeds
Method of preparation:
Bring a pan of water to the boil and blanch the sugar snap peas for about 1 minute. Drain and immediately plunge into ice water to stop cooking. Drain again and set aside.
In a small bowl, whisk together the garlic flavoured olive oil, low-sodium soy sauce, sesame oil, chilli oil and brown sugar until well combined.
Place the blanched sugar snap peas in a large bowl and drizzle with the sauce. Toss to coat evenly.
Transfer the sugar snap peas to a serving platter and sprinkle with toasted sesame seeds.
