A simple Mexican salad with mango and avocado. You can prepare this healthy meal in just a few minutes.
Ingredients
- Mango, 1 piece
- Avocado, 1 piece
- Lime, 1 piece
- Small red onion, 1/2
- Small red bell pepper, 1
- Small can of corn, 1
- Small can of red beans, 1
- Cilantro leaves, 4 tablespoons
- Maple syrup, 1 teaspoon
- Extra virgin olive oil, 1 teaspoon
- Chili flakes, a pinch
Preparation
Peel the mango and avocado, cut them into small cubes, and place them in a salad bowl or glass dish. Squeeze the juice from the lime over the fruit.
Add the finely chopped red onion, diced red bell pepper, drained corn, and red beans.
Add the cilantro leaves, maple syrup, olive oil, and chili flakes. Mix everything together and serve.
