Cod in Parchment

A simple and quick dish to make – all done in half an hour. A new way to prepare parchment packets – on the stovetop, without using an oven! Cod in parchment is a fantastic recipe for a delicious family dinner.

Ingredients

  • cod fillet, 220 g
  • salt, pepper
  • extra virgin olive oil, 2 tablespoons
  • blue cheese, 80 g
  • zucchini, 1 (300 g)
  • leek, 1 small
  • carrot, 1 small
  • cherry tomatoes, 100 g
  • green leaves (e.g., basil, parsley)
  • parchment paper, 2 sheets

Preparation

Rinse the cod, pat dry, divide into 2 portions, season with salt and pepper, brush with olive oil, and set aside.

Dice the zucchini. Wash the white part of the leek, cut in half, then into half-moons. Peel the carrot and cut into matchsticks. Season the vegetables with salt and pepper and mix.

Place the vegetables in the center of the parchment paper sheets, lay the cod with olive oil on top. Place slices of blue cheese on the fish. Sprinkle with halved cherry tomatoes.

Wrap the packets tightly and place them on a preheated large skillet. Cook uncovered over medium heat for 10 minutes.
