Made with a blend of aromatic onions, garlic and a hint of nutritional yeast, this gravy has a depth of flavour that’s both comforting and complex. Whether it’s poured over a steaming pile of mashed potatoes or used as a base for a hearty stew, this sauce is the perfect complement to any meal.
Ingredients:
- ½ cup vegetable oil
- ⅓ cup chopped onion
- 5 cloves of garlic, minced
- ½ cup all purpose flour
- 4 teaspoons nutritional yeast
- 4 tablespoons light soy sauce, or to taste
- 2 cups vegetable stock
- ½ teaspoon dried sage
- ½ teaspoon salt, or to taste
- ¼ teaspoon ground black pepper
Method of cooking:
In a medium saucepan, heat the vegetable oil over a medium heat. Add the chopped onion and minced garlic and cook until the onion is soft and translucent, about 5 minutes.
Stir in the all-purpose flour and nutritional yeast and cook for a few minutes to make a smooth paste. This will help thicken the sauce.
Gradually whisk in the vegetable stock to avoid lumps. Then add the light soy sauce, which will add a rich umami flavour to the sauce.
Season to taste with dried sage, salt and ground black pepper. Bring to the boil, then reduce the heat and simmer until the sauce thickens to your desired consistency.
Taste and adjust seasoning if necessary. If the sauce is too thick, thin with a little more stock or water. Serve hot over your favourite vegetarian dish.
